Full Job Description: -Proficiently Trimming all Proteins to Lewis Barbecue standards -Proper storage and receiving of proteins -Sausage production including grinding, mixing, stuffing, and smoking -Breaking down primals and utilizing waste -Trussing certain cuts of meat -High Volume, must be able to trim very large amount of individual proteins in a quick, timely, and precise manner -Proteins include but not limited to; Brisket, Turkey, Pork Shoulder, Sausage, Prime Rib, Spare ribs, Beef Ribs, Beef Back Ribs, Country Style Steak, Pastrami Skills and attributes of successful candidates: -Time management -Punctual -Self Motivated -Driven -On Task -Focused and Present In 2015, John Lewis packed up his smokers and moved to the Holy City from Austin, Texas to introduce the Lowcountry to the great world of Texas barbecue.
