We are seeking a dynamic and creative Specialty Chef to join our culinary team. The ideal candidate will possess a deep understanding of farm-to-table concepts, experience in catering growth and expansion, and the ability to design menus for a variety of events. This role requires strong leadership skills, a passion for culinary excellence, and a keen eye for beverage pairings that enhance the dining experience. Key Responsibilities: - Menu and Concept Generation: Develop and execute innovative menus that reflect seasonal ingredients and current culinary trends, ensuring a balance of creativity and guest appeal for both upscale and casual events. - Farm-to-Table Expertise: Source and establish relationships with local farmers and suppliers to procure the freshest ingredients, promoting sustainability and responsible sourcing practices. - Catering Growth and Expansion: Design and implement catering menus tailored to a variety of events, from intimate gatherings to large celebrations. Collaborate with the sales and marketing team to promote and expand catering services. - Event Management: Oversee the culinary aspects of both large and small events, ensuring seamless execution and high-quality food presentation. - Beverage Pairings: Collaborate with the beverage team to create thoughtful beverage pairings that complement menu offerings, enhancing the overall dining experience. - Restaurant Operations: Assist in the daily operations of the kitchen, ensuring efficient workflow, adherence to food safety standards, and maintaining a clean and organized workspace. - Cost of Goods Management: Monitor and manage food costs, inventory levels, and waste reduction strategies to ensure profitability while maintaining quality standards. - Team Leadership: Lead, mentor, and train kitchen staff, fostering a collaborative and high-performance environment. Encourage creativity and professional development among team members. - Quality Control: Conduct regular tastings and quality checks to ensure consistency and adherence to established culinary standards. Qualifications: - Proven experience as a Specialty Chef or in a similar role within upscale dining and catering environments. - Strong knowledge of farm-to-table practices and local sourcing. - Culinary degree or equivalent experience preferred. - Excellent leadership and communication skills. - Creative mindset with a passion for culinary innovation and event execution. - Strong organizational skills and attention to detail, particularly in cost management. - Ability to work in a fast-paced environment and manage multiple tasks effectively.
