Dietary Services Manager
Job Summary
Under the supervision of the Operations Director, the Dietary Services Manager will plan, organize and manage the daily operation of the Dietary Department. This position performs dining services and assumes general responsibility for the kitchen and food services. The Dietary Services Manager will collaborate with contracted food service providers if utilized by the PO to ensure the food received meets the necessary dietary guidelines and the BoldAge standard of quality. The Dietary Services Manager must act in accordance with current federal, state, and local standards, guidelines and regulations that govern the facility to assure that quality dietary services are provided on a daily basis and that the dietary department is maintained in a clean, safe, and sanitary manner.
Experience And Education
• High school diploma or GED.
• Serve Safe Certified
• Two years working in dietary services including meal planning and preparation
• Minimum of one year working with a frail or elderly population
Essential Duties And Responsibilities
• Ensures implementation of current policies and procedures concerning food procurement, preparation and service, which reflect compliance with regulatory and facility guidelines.
• Assure that dietary expenses are within budgetary limits. Maintain current written records of department expenditures and provide documentation, records and cost reports to the appropriate administrators as required.
• In collaboration with the Registered Dietitian ensures that physician orders and established dietary care plans are followed in processing regular diets, new diets, and diet changes
• In collaboration with the Dietitian plan the monthly menus for meal service at the PACE center and ensure that it meets the nutritional requirements of participants, regulations and the CACFP (Child and Adult Care Food Program) if indicated.
• Updates the kitchen daily census list
• Ensure that food equipment and supplies for all meals are readily available.
• If participates in the CACFP monitors new enrollments, withdrawals and reports summary to the CACFP on the monthly reimbursement voucher. Daily meal monitoring and attendance for CACFP.
• Establish and maintain productive lines of communication between dietary services and other program departments and services.
• Prepare meals that are tasty and appetizing in appearance.
• Serve food according to established portion and control procedures.
• Ensure that all day-to-day cleaning and housekeeping functions in the kitchen areas are completed.
• Ensure that the following logs are completed daily:
• Freezer and Refrigerator Temperature
• Kitchen Handwashing Sink Temperature
• Dish Machine Temperature
• Three-Compartment Sink Temperatures
• Food/Service Temperature and associated logs (temp log for contracted food delivery, cooking temperature log if re-heating or cooking in oven)
• Calibration of Thermometers (if appropriate)
• Assists in monitoring meals, including intake, and diet compliance.
• Implements the nutritional components of participant plan of care including active participation and development of therapeutic dining programs.
• Oversees maintenance/cleanliness and orderliness of serving kitchen.
• Monitors portion control; appropriate serving of food; adherence to therapeutic diets, purchasing and inventory of food.
• In conjunction with the Registered Dietitian responsible for the management of therapeutic and mechanically altered diets, including modification to meet individual participant needs, and physician orders.
• Protects privacy and maintains confidentiality of company procedures, results and information about employees, participants and families.
• Participates in quality performance teams, task forces and/or committees to support BoldAge QI program.
• Supervise and evaluate the performance of dietary aides and any other positions developed and identified as kitchen staff.
• Trained in Serv-Safe program and provide training to anyone that serves food to participants.
• Orders and tracks food, reviews invoice and submits for approval
• Orders kitchen equipment and supplies as needed
• Performs other duties/projects and participates in other committees as requested
