The primary responsibility of the Dining Director is to oversee the total functioning of the Dining Services Department.
· Establishes purchasing procedures; requires highest food quality from vendors.
· Develops nutritious, attractive menus.
· Provides opportunities for staff development
· Develops and maintains inventory control policies and procedures.
· Evaluates weekly Cost Reports
· Coordinates interdepartmental/dining requirements and is knowledgeable of regulations
relating to licensures.
· Requisitions capital expenditures
· Directs staff in planning for catering and special events.
· Directs supervisory staff to schedule and direct the work of the department staff.
· Directs supervisory staff for orientation program of new employees
· Supervises standardization of recipes, portion, and cost control for the department.
· Conducts staff meetings with all Dining staff.
· Coordinates King’s Grant’s relationship with the consultant dietitian.
· Participates on the Resident Review Committee of the KG staff.
· Participates on the Dining Services Committee of the Residents’ Association.
· Possesses strong communication skills in order to interact with residents, staff, and others concerning King’s Grant’s dining operations, including handling questions and complaints from residents, staff, and others.
· Understands and comprehends labels, name tags, and diet information cards to perform essential job duties.
· Possesses strong organizational and management skills in order to supervise employees of department, select objectives for the department, and implement those objectives.
· Displays ability to work satisfactorily under pressure.
· Comprehends, analyzes, and follows rules and regulations in food sanitation, safety and other related fields and ensures that King’s Grant complies with the same.
· Comprehends and displays knowledge of basic principles of nutrition as it relates to menu planning and implements such knowledge in all aspects of King’s Grant dining services.
· Acts as a liaison with vending machine CANTEEN and other contract services.
· Travel required as needed to meetings and functions off campus.
· Meet all training requirements as required by Federal and State Regulations, company and community policies.
· Demonstrate a commitment to safety by following safety rules and guidelines; follow good housekeeping practices, take proper care of equipment and perform job duties and responsibilities in a safe and responsible manner.
· Demonstrate dependability, reliability and punctuality. Report to work when schedule, ready to work.
Requirements
· Associate’s or bachelor’s degree in food service or related field or equivalent related work experience is required and certification as a Dietary Manager or Dietetic Technician Registered is preferred.
· Two + years managerial experience in the Food Service Industry.
· Knowledge of employee relations, ethics, food sanitation, safety, food and labor laws, housekeeping procedures, basic food preparations, and accepted food service techniques.
· Computer literacy and ability to learn new programs as needed is preferred.
· Valid Virginia drivers’ license.
