Preferred Qualifications Position Summary
This position will support the Meat Science Technology Center ( MSTC ), operations, and teaching, research, and youth outreach in meat science in the Department of Animal and Dairy Science reporting to the MTSC manager. It will oversee and assist with all daily duties involved in the operation of a U.S.D.A. inspected meat slaughter and processing facility and assist with the implementation of HACCP system for all aspects of the MSTC , including SSOP's SOP's and GMP's and record-keeping, so that all requirements are met. It will work with MSTC manager and Meat Science faculty in the execution of research projects conducted in the MSTC as well as assist and help teach laboratory portions of meat science courses.
Knowledge, Skills, Abilities and/or Competencies
- A minimum of a B.S. degree in animal science, meat science, or a related field by the time of hire.
- Knowledge of the harvest, fabrication, further processing, and packaging of all livestock species
- Knowledge of HACCP plans and documentation.
- Knowledge and operation of specialized processing equipment is necessary; including the use of knives, band saws, grinders, slicers, injectors, cubers, stuffers, scales, and sanitation equipment.
- Excellent written, oral, and interpersonal communication skills as well as good time management.
- Ability to engage youth in non-formal educational settings and the ability to enhance student success through the intercollegiate meats judging program is encouraged.
- Ability to work in a diverse team atmosphere.
- Ability to effectively communicate with customers, to assist with meat selection and information.

Work for extended periods of time in extreme temperatures. Lift and move heavy products (greater than 100 lbs) if necessary.

Duties/Responsibilities
This position will oversee and assist with all daily duties involved in the operation of a U.S.D.A. inspected meat slaughter and processing facility. These duties will include sanitation, slaughter, further processing, record keeping, operating weekly retail sales, and marketing specialty processed meat products that are made by students in the Meat Science Technology Center ( MSTC ). In addition, daily duties include assisting with the training of student workers in plant operations such as harvest and fabrication of beef, pork, and lamb as well as the production and packaging of fresh and further processed meats. This position includes assisting with the implementation of HACCP system for all aspects of the MSTC , including SSOP's SOP's and GMP's and record-keeping, so that all requirements are met.

Duties/Responsibilities
This person will work with MSTC manager and Meat Science faculty in the execution of research projects conducted in the MSTC as well as assist and help teach laboratory portions of meat science courses including but not limited to, ADSC 3180 Meats Judging I, ADSC 3190 Meats Judging II, ADSC 3200 Livestock and Carcass Evaluation, ADSC 3650 Meat Science, and ADSC 4160 Meat Processing. This also includes product acquisition for related labs and meat judging programs and events. This position must be able to take basic guidance and planning from supervisors regarding planning and class needs and be able to direct student workers in completing all tasks in a safe and efficient manner.

Duties/Responsibilities
The youth component of the position will entail providing support of meat science educational programming to present important knowledge and understanding to our youth, producers and consumers. In this capacity, this position will interact with Georgia FFA and 4-H leaders to assist meats outreach programs that have youth as the target audience.
